  • 1/2 cup unsalted butter (softened)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 1/4 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 cup old-fashioned oats
  • 1 tbsp honey (or molasses)
  • 1 tsp cinnamon
  • Baking soda and salt

Instructions

  1. Preheat the oven to 350F (180C) and line baking sheets with parchment paper.
  2. In a large bowl, beat together softened butter, white sugar, and brown sugar until fluffy.
  3. Add the egg, honey, and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture until just combined.
  6. Fold in both quick oats and old-fashioned oats until evenly distributed.
  7. Shape dough into balls about 1 to 1.5 tablespoons each and place them on lined baking sheets.
  8. Bake for 10-13 minutes or until the tops look set; allow them to cool on the baking sheet for at least 10 minutes before transferring to a wire rack.
