  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion; cook until beef is browned and onions are translucent (about 8–10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil before adding rice. Stir again once boiling.
  4. Cover and reduce heat to low; simmer for about 15 minutes until rice is tender.
  5. Sprinkle shredded cheese on top and cook for another 5 minutes until melted.
