1 teaspoon olive oil
2 cloves garlic, minced
1 ½ cups low-sodium chicken broth
1 cup milk
1 (20-ounce) package cheese tortellini
3 cups fresh broccoli, roughly chopped
1 (8-ounce) package cream cheese
½ cup grated Parmesan cheese
2 cups cooked chicken, diced
Salt and black pepper, to taste
Instructions
- Heat olive oil over medium-high heat in a large pot. Add minced garlic and cook for 30 seconds, until fragrant.
- Add chicken broth and milk to the pot and bring to a boil.
- Stir in the cheese tortellini and cook for 2 minutes.
- Add the broccoli and continue cooking for about 3 minutes, stirring occasionally, until the tortellini is tender and the broccoli is bright green.
- Lower the heat and stir in the cream cheese and Parmesan cheese until fully melted and combined.
- Add the cooked chicken and stir until heated through.
- Season with salt and black pepper to taste.
- Serve hot, topped with extra Parmesan cheese if desired.
Notes
- If using frozen tortellini, they may take an extra 1–2 minutes to cook. Check the package instructions for exact cooking times.
- For a richer flavor, substitute heavy cream for milk.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
