  • ½ onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 tbsp tomato paste
  • ½ tsp cumin powder
  • Salt and black pepper to taste
  • 1½ cups mozzarella cheese
  • 1½ cups cheddar cheese
  • 8 flour tortillas
  • 2 tbsp vegetable oil

Instructions

  1. In a non-stick frying pan, heat vegetable oil over medium-high heat. Sauté chopped onion and garlic until fragrant (about 3 minutes). Add ground beef and cook until slightly browned. Stir in tomato paste, cumin, salt, and pepper; mix well and transfer to a bowl.
  2. Lay one tortilla on a cutting board. On one half, layer mozzarella cheese, cheddar cheese, and the beef mixture. Top with more cheese before folding the tortilla in half.
  3. Heat remaining oil in the pan over medium-low heat. Cook the quesadilla for about 3 minutes per side or until golden brown and crispy.
  4. Transfer to a cutting board, cut in half for serving, and enjoy with salsa or guacamole.
