2 lbs chicken, cut into pieces
1 onion, finely chopped
3 cloves garlic, minced
2 carrots, diced
2 potatoes, diced
1 sweet potato, diced
1 cup pumpkin, cubed
1 cup coconut milk
6 cups chicken broth
1 tsp thyme
1 tsp allspice
2 scallions, chopped
Salt and pepper to taste
2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
    1. Add the onions and garlic, and sauté until fragrant.
    2. Add the chicken pieces and brown them on all sides.
    3. Stir in the thyme, allspice, and scallions.
    4. Pour in the chicken broth and bring the mixture to a gentle boil.
    5. Add the carrots, potatoes, sweet potato, and pumpkin.
    6. Reduce the heat and let the soup simmer until the chicken is tender and the vegetables are cooked.
    7. Pour in the coconut milk and let the soup simmer for an additional 10 minutes.
    8. Season with salt and pepper to taste.
