  • 3 cups broccoli florets
  • 1 ½ cups shredded cheddar cheese
  • 2 oz cream cheese (room temperature)
  • ¼ cup olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin (optional)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice a pocket into each chicken breast using a sharp knife and season with garlic powder, cumin (if using), salt, and pepper.
  3. In a mixing bowl, combine broccoli florets, cheddar cheese, cream cheese, chives, salt, and pepper; mix well.
  4. Stuff each chicken breast pocket with the broccoli mixture.
  5. Heat half the olive oil in a baking dish over medium-high heat and sear each stuffed chicken breast for about 3–4 minutes on each side until golden brown.
  6. Drizzle remaining olive oil over the seared chicken and bake for approximately 20–25 minutes until fully cooked.
