  • 6 strips bacon
  • 4 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon black pepper
  • 8 slices cheddar cheese (or 1 1/2 cups shredded)
  • 4 thick slices sourdough bread
  • 4 tablespoons unsalted butter, softened

Instructions

  1. In a skillet over medium heat, fry the bacon until crispy. Drain on paper towels.
  2. In a mixing bowl, whisk together eggs, milk, and black pepper. Scramble in the bacon grease over medium-low heat until softly cooked; set aside.
  3. Assemble sandwiches by placing two slices of cheese on each slice of sourdough. On half of the bread slices, layer bacon and scrambled eggs before topping with remaining bread.
  4. Butter the outer sides of each sandwich and heat your skillet to medium.
  5. Cook sandwiches for about 3-4 minutes on each side until golden brown and cheese is melted.
  6. Allow to cool slightly before slicing in half and serving warm.
