  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a stand mixer bowl, combine flour, sugar, yeast, and salt. In another bowl, mix warmed milk, eggs, and melted butter; gradually add to dry ingredients while mixing on low speed until a dough forms. Knead until smooth.
  2. Let the dough rise in a warm place for about an hour until doubled in size.
  3. Prepare the pastry cream by simmering milk and sugar; whisk together egg yolks, cornstarch, and vanilla. Slowly add hot milk to the egg mixture while whisking. Return to heat until thickened; stir in butter.
  4. Roll out risen dough and cut into circles. Allow to rise again for 30 minutes.
  5. Heat vegetable oil to 350°F (175°C) and fry circles until golden brown on each side. Drain on paper towels.
