  • 1/8 teaspoon nutmeg

  • 1 stick salted butter (1/2 cup, melted)
  • 3 large ripe bananas (mashed)
  • 1/2 cup sugar
  • 1/4 cup dark brown sugar (packed)
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 to 1 cup walnuts (toasted if desired)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together flours, baking soda, salt, nutmeg, and cinnamon.
  3. Melt butter and let cool slightly; then mash bananas in another bowl.
  4. Combine melted butter, bananas, sugars, milk, egg, and vanilla in the bowl with bananas.
  5. Pour wet ingredients into dry ingredients and mix gently until just combined.
  6. Fold in walnuts and spoon batter into greased or lined muffin cups.
  7. Sprinkle remaining walnuts on top.
  8. Bake for about 22-26 minutes until golden brown and a toothpick comes out clean.
  9. Cool for five minutes in the pan before transferring to a wire rack.
