Ingredients
Scale
- 3/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 cup golden brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 4 ripe bananas
- 1 3/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
- 1 cup walnuts, chopped
Instructions
- In a large mixing bowl, add granulated sugar, brown sugar, and melted butter. Use an electric hand mixer to combine everything for about 1 minute on medium-low speed.
- Add vanilla extract and eggs, mixing on medium speed.
- In a separate bowl, mash the ripe bananas, then add them to the muffin batter.
- Sift in the dry ingredients: all-purpose flour, baking soda, and salt. Mix them into the banana muffin batter.
- Fold in the chopped walnuts and semisweet chocolate chips using a spatula.
- Line a muffin tin with cupcake liners and fill each muffin cup full. The recipe makes about 12-13 muffins.
- Top the muffins with extra chocolate chips and bake at 350°F for 20-24 minutes.
Notes
- Sift the dry ingredients – This ensures even mixing and prevents clumps of flour in your muffins.
- Ripen the bananas yourself – Place unripe bananas on a baking sheet and bake for 15 minutes at 350°F. Let them cool before using.
- Use cupcake liners – This prevents a mess from melted chocolate and makes storage easier.
- Add chocolate chips on top – This gives the muffins a professional look with a delicious layer of melted chocolate.
