Description
These baked feta potatoes – inspired by the viral baked feta pasta trend – make the perfect rich, flavorful side dish, with crispy roasted potatoes tossed in baked feta cheese.

Ingredients
- 1–2 large baking potatoes
- 1 (200 g) block of feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 head of garlic (top cut off)
- 1 lemon, quartered
- 1 tablespoon honey
- 1/4 cup (20 g) fresh basil, shredded
Instructions
Preheat your oven to 200°C (390°F).
Wash and cube the potatoes, then add them to a baking dish.
Add the thyme, oregano, salt, pepper, and 1 tablespoon of olive oil to the potatoes. Stir to coat evenly.

Place the feta block in the middle of the tray. (Optional: Dip one side in the seasonings before flipping.)
Add the garlic head and half of the lemon wedges to the tray. Drizzle everything with the remaining 1 tablespoon of olive oil.
Bake for 45–55 minutes, until potatoes are crispy and golden. Remove garlic after 35 minutes if it starts browning too much.
Once garlic is cool enough to handle, squeeze the cloves from the skins and mash them.
Stir the mashed garlic and juice from the remaining lemon wedges into the potatoes and feta. Add the fresh shredded basil and mix gently.
Drizzle with honey and garnish with more basil. Serve warm.
Notes
If the potatoes are not fully cooked by the time the feta is ready, remove the feta to avoid it becoming rubbery and continue roasting the potatoes. For best results, cube your potatoes on the smaller side.
