  • 1-2 large baking potatoes
  • 1 block of feta cheese (200g)
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 head of garlic (with the top cut off)
  • 1 lemon, quartered
  • 1 tablespoon of honey
  • 1/4 cup (20g) of fresh basil

Instructions:
Follow these simple steps to create your own Baked Feta Potatoes:

  1. Preheat your oven to 200°C (390°F).
  2. Start by washing and cubing your potatoes. Once done, place them into a baking dish.
  3. Add the dried thyme, oregano, salt, and pepper to the potatoes along with 1 tablespoon of olive oil. Stir well to ensure the potatoes are evenly coated with the seasonings.
  4. Place the block of feta cheese in the middle of the tray. For an extra kick of flavor, dip one side of the cheese in the seasonings before flipping it over.
  5. Add the garlic head and half of the quartered lemon to the tray. Drizzle the remaining olive oil over everything.
  6. Bake in the preheated oven for 45 to 55 minutes. Keep an eye on the garlic, and if it begins to brown too quickly, remove it after about 35 minutes.
  7. Once done, squeeze the roasted garlic cloves out of their skins and mash them with a knife.
  8. Stir the mashed garlic, along with the juice from the remaining lemon half, back into the potatoes. Add in your fresh basil, gently mixing everything together with a spoon.
  9. Finish off by drizzling honey and adding some shredded basil on top.
  10. Serve hot and enjoy this flavorful side dish!

Tips and Notes:

  • If your potatoes aren’t fully cooked by the end of the baking time, consider removing the feta cheese and continue roasting the potatoes until they’re done to prevent the feta from becoming rubbery.
  • For quicker cooking, cube your potatoes into smaller pieces.

Ingredients

Scale
  • 12 large baking potatoes
  • 1 (200 g) block of feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tablespoon honey
  • 1/4 cup (20 g) fresh basil, shredded

Instructions

  • Preheat your oven to 200°C (390°F).

  • Wash and cube the potatoes, then add them to a baking dish.

  • Add the thyme, oregano, salt, pepper, and 1 tablespoon of olive oil to the potatoes. Stir to coat evenly.

  • Place the feta block in the middle of the tray. (Optional: Dip one side in the seasonings before flipping.)

  • Add the garlic head and half of the lemon wedges to the tray. Drizzle everything with the remaining 1 tablespoon of olive oil.

  • Bake for 45–55 minutes, until potatoes are crispy and golden. Remove garlic after 35 minutes if it starts browning too much.

  • Once garlic is cool enough to handle, squeeze the cloves from the skins and mash them.

  • Stir the mashed garlic and juice from the remaining lemon wedges into the potatoes and feta. Add the fresh shredded basil and mix gently.

  • Drizzle with honey and garnish with more basil. Serve warm.

Notes

If the potatoes are not fully cooked by the time the feta is ready, remove the feta to avoid it becoming rubbery and continue roasting the potatoes. For best results, cube your potatoes on the smaller side.
