- ¼ cup grated Parmesan cheese
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 large eggs, beaten
- 2 tablespoons hot sauce
- 2 pounds chicken breast tenderloins
- Extra virgin olive oil, for drizzling
For the Hot Honey:
- ½ cup honey
- 2–3 tablespoons hot sauce
- 1–3 teaspoons cayenne pepper
- ¾ teaspoon chipotle chili powder
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Sea salt, to taste
- Fresh thyme, cilantro, or parsley, for garnish
Instructions
. Preheat and Prepare Baking Sheet:
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
2. Make the Crunchy Coating:
- In a food processor, combine cornflakes, Parmesan, smoked paprika, onion powder, garlic powder, and a pinch of salt.
- Pulse until fine crumbs form.
- Alternatively, place the ingredients in a ziplock bag and crush using a rolling pin or by stepping on it.
- Pour the crumbs into a shallow bowl.
3. Coat the Chicken:
- In a separate bowl, beat the eggs and mix in the hot sauce.
- Add the chicken tenderloins and toss to coat evenly.
- Dredge each piece of chicken through the cornflake mixture, ensuring full coverage.
- For a thicker crust, dip the chicken back into the egg mixture, then coat with crumbs a second time.
- Place on the prepared baking sheet and drizzle lightly with olive oil.
4. Bake the Chicken:
- Bake for 20-25 minutes, or until crispy and golden brown.
5. Make the Hot Honey Sauce:
- While the chicken bakes, warm a small saucepan over low heat.
- Add honey, hot sauce, cayenne pepper, chipotle chili powder, onion powder, garlic powder, and a pinch of salt.
- Stir until well combined and heated through.
6. Finish and Serve:
- Drizzle the warm hot honey over the baked chicken.
- Garnish with fresh thyme, cilantro, or parsley.
- If the honey thickens, warm it for 5 seconds in the microwave before drizzling.
Notes
- For extra crispiness, spray the chicken lightly with cooking oil before baking.
- Adjust the spiciness by increasing or decreasing the cayenne and hot sauce.
- Serve with coleslaw, mashed potatoes, or a fresh salad for a complete meal.
