For the Chicken:

  • 6 cups cornflakes (use gluten-free if needed)
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • Extra virgin olive oil, for drizzling

For the Hot Honey:

 

  • ½ cup honey
  • 23 tablespoons hot sauce
  • 13 teaspoons cayenne pepper
  • ¾ teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Sea salt, to taste
  • Fresh thyme, cilantro, or parsley, for garnish

Instructions

. Preheat and Prepare Baking Sheet:

  • Preheat the oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.

2. Make the Crunchy Coating:

  • In a food processor, combine cornflakes, Parmesan, smoked paprika, onion powder, garlic powder, and a pinch of salt.
  • Pulse until fine crumbs form.
  • Alternatively, place the ingredients in a ziplock bag and crush using a rolling pin or by stepping on it.
  • Pour the crumbs into a shallow bowl.

3. Coat the Chicken:

  • In a separate bowl, beat the eggs and mix in the hot sauce.
  • Add the chicken tenderloins and toss to coat evenly.
  • Dredge each piece of chicken through the cornflake mixture, ensuring full coverage.
  • For a thicker crust, dip the chicken back into the egg mixture, then coat with crumbs a second time.
  • Place on the prepared baking sheet and drizzle lightly with olive oil.

4. Bake the Chicken:

  • Bake for 20-25 minutes, or until crispy and golden brown.

5. Make the Hot Honey Sauce:

  • While the chicken bakes, warm a small saucepan over low heat.
  • Add honey, hot sauce, cayenne pepper, chipotle chili powder, onion powder, garlic powder, and a pinch of salt.
  • Stir until well combined and heated through.

6. Finish and Serve:

 

  • Drizzle the warm hot honey over the baked chicken.
  • Garnish with fresh thyme, cilantro, or parsley.
  • If the honey thickens, warm it for 5 seconds in the microwave before drizzling.

  • For extra crispiness, spray the chicken lightly with cooking oil before baking.
