  • 8-inch flour tortilla
  • 2 slices cooked and chopped bacon
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 teaspoon butter (optional)

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper.
  2. Heat butter in a non-stick frying pan over medium-low heat and pour in the egg mixture.
  3. Cook until the edges are set but the center remains soft; sprinkle half of the bacon and cheese on top.
  4. Place the tortilla on top of the egg mixture and carefully flip the pan.
  5. Add remaining bacon and cheese on top of the tortilla and fold it in half.
  6. Cook until golden brown on both sides and cheese is melted.
  7. Slice into wedges using a pizza cutter and serve warm.
